Curricula Fostering Nourishment, Stewardship, and Community

The Food Literacy Center in California teaches children in low-income elementary schools cooking, nutrition, gardening, and active play to improve their health, the environment, and the economy. Since schools closed in spring 2020 due to COVID-19, the Food Literacy Center has been sharing its previously proprietary curriculum for all students and families. The lessons are intended to get children into the kitchen and encourage them to eat their vegetables. Each lesson includes a video tutorial in which children cook with nutritionists, printable recipes (in English, Spanish, and Hmong), STEM-based lesson plans, activities, and more. Examples of recipes are “Sunflower Seed Butter & Seasonal Fruit Sandwich,” “Tres Hermanas Tacos,” and “Rainbow Soup.”

Plus: A sustainable educational initiative of WorldLink, Nourish: Food + Community increases health literacy through television and web content, short films, and classroom materials. Nourish produces a free curriculum guide and companion DVD for teachers to use in classrooms around the world. The organization’s self-titled film, Nourish, combines expert interviews with rich storytelling to examine the connection of food to public health, social justice, and climate change.

Plus: Edible Schoolyard offers food education programs at schools worldwide. Understanding Organic: Connections to Action in the Garden Classroom is Edible Schoolyard’s new garden and classroom-based curriculum for middle school and high school students that explores the concepts and meanings of organic agriculture. The curriculum consists of a short preparatory unit, a sequence of 10 core lessons, and 12 optional extension inquiries that can be taught as a full program or as standalone lessons. The 10 core lessons use hands-on explorations of organic practices and feature textual analysis and open discussions to examine the complex meanings of organic. The final project workbook introduces students to a social action project in which students apply their knowledge and experiences to enact justice-oriented change related to organic.
